Chicken Afritada

What you’ll need

1/2 kilo of chicken breast, quartered

2 red onions, cut in half

4 potatoes, quartered
2 carrots, round cuts
1 red bell pepper, cut into stripes

1 bag of mixed vegetables

2 200 grams of red tomato sauce
3 tablespoons of cooking oil
1 1/4 cup of water

How to do it

– In a medium sized casserole, heat oil over medium heat.
– Saute onions until translucent.
– Add the chicken and let it cook for 30 minutes.
– Add the tomato sauce, stir occasionally until it boils.
– Add potatoes, carrots, and bell pepper. Cook for 15 to 20 minutes.
– Remove from heat and transfer to a serving bowl.

Serves four (4) people | Best served with hot rice. 🙂

Note on this recipe

* The problem I always encounter when cooking with tomato sauce is it always
gets burnt. In order for you to avoid this, use a non-stick casserole or
any heavy bottomed or aluminum bottomed casseroles.
