Not feeling like opening up the stove for breakfast? Here’s the perfect thing for you. This quick and easy is the answer to your laziness, this will only take 30 minutes max and you’ll have something for breakfast and for a snack for later.

Quick and easy tuna sandwich

What you’ll need

1 can of tuna in water
1 1/2 cup of mayonnaise
1 tablespoon of ground black pepper
1 bulb of red onion
Salt,  to taste

How to do it

– Chop the red onion, make sure it’s diced then place in on a deep tupperware/container.

– Open the can of tuna and chop finely then place on your container.

– Add the 1 1/2 cup of mayonnaise, 1 tablespoon of ground black pepper and salt then mix well.

– Leave it on your refrigerator for 15 minutes, just enough for it to be cold and you’re done.

Serves ten (10) people | Best served with a warm cup of coffee.  πŸ™‚

Sardine Pasta

There is nothing like a quick pasta for breakfast. Today I’m sharing with you my go-to recipe for every meal. You can have this either for breakfast, lunch, snack or dinner. This is my breakfast for day 6 of Breakfast Week.

Sardine Pasta

What you’ll need

1 tablespoon of minced garlic
1 medium red onion, diced

1 teaspoon of garlic powder
2 teaspoon of chili flakes

5 pieces of spanish sardines, sliced (I purchased the bottled kind)
175 grams of spaghetti noodles

How to do it

For the noodles:

– In a medium sized casserole, fill it with water.
– Add olive oil and one (1) teaspoon of salt, and let it boil.
– Once it boils, pour the noodles.
– Occasionally, mix it so the noodles won’t stick.
– You’ll know its cooked when you can slice it in half with a fork.

For the sardines:

– In a small non-stick pan, heat olive oil over medium heat.
– Saute the onions until translucent then add the minced garlic.
– Add in the chopped spanish sardines, garlic powder and chili flakes.
Add more chili flakes if you want a bit more spice to it.

Serves two (2) people | Best served with a toasted garlic bread. πŸ™‚

Home-made Pancakes

Don’t you just love pancakes? You can have them plain, or mix it with fruits, chocolate or even bacon! Me, I just prefer them plain, with lots of butter and syrup with a slice of ham or bacon and a cup of coffee.
I’ve been curious for so long on how to make my very own pancake mix, and through my search over the internet I’ve found the perfect recipe on this website. Here’s my breakfast for day 5 of Breakfast Week.

Home-made Pancakes

What you’ll need

4 cups flour
3 tablespoons baking powder
2 teaspoons baking soda
1 teaspoon kosher salt
2 tablespoons plus 2 teaspoons sugar

How to do it (Pancake mix)

– Whisk together all ingredients in a large bowl and
store in an airtight container or zip-close plastic bag.

– Tape pancake instructions to the dry mix receptacle.

How to do it (Pancake)

– Scoop one cup of dry pancake mix into a bowl.
Add one egg, one cup of milk and one tablespoon
of melted butter. Whisk until smooth.

– Preheat a non-stick pan or griddle over medium high heat.
Grease the pan with butter or non-stick cooking spray.

3. Pour the batter onto the preheated pan or griddle by
1/4 cup measures (or any size you like) and cook until
bubbles appear on the surface of each cake. Flip and cook
another 1-2 minutes, until the second side is golden brown.

4. Serve immediately with toppings of your choice like butter,
maple syrup, powdered sugar and fruit.

Serves four (4) people | Best served with toppings like butter, maple syrup, powdered sugar,
fruits, bacon or sweet ham and good cup of coffee. πŸ™‚

Notes on this recipe

* Since I ran out of butter, I tried using canola oil as a
substitute. It was okay, a bit flat and dry but tolerable
I would still use butter.

* If you rarely use kosher salt in your cooking like I do,
use can also use your normal iodized or rock white salt.

* You can also add a teaspoon of cinnamon to the pancake mix
for added flavor.

* You can also use a combination of equal parts white and wheat flour.

Home-made Hash Brown

First of all I would like to apologize for this super late blog post, the past few days have been really busy and I felt under the weather to even get out of the bed.

Hash browns are an absolute favorite breakfast or snack food ever! I would remember my late grandmother buying me 2-pieces of this before she goes home from her market day. I thought making hash browns would be hard to do so I always preferred to buy them frozen or cooked. Recently, thinking of a recipe line-up for Breakfast Week I came across this one. I saw how easy and fast it is to make one so I decided to try it.

Now this is the late continuation of Breakfast Week, I present to you a Hash brown recipe for Day 4.

Home-made Hash Browns

What you’ll need

1 medium sized potato
1 tablespoon of minced garlic
1/2 cup of butter
salt and pepper, to taste

How to do it

– Wash, peel and grate the potato in a bowl.
– Add the minced garlic, salt and pepper.
– In a small non-stick pan, heat the pan over medium heat then
place the butter and let it melt.
– Add the potato in the pan and shape to your preference.
– Fry one side until golden brown then flip it and do the same.

Serves one (1) person | Best served with a warm cup of coffee. πŸ™‚

Notes on this recipe

* Once done with grating the potato, place it in a clean dish towel
or paper napkin and firmly twist to remove excess moisture.

* I suggest you use a box grater with the potato because its much
easier, but a flat grater is tolerable.

* You can also add garlic powder to add more flavor.

Longganisa Hash with Tomato Scrambled Eggs and Garlic Fried Rice

Day three (3) of the “Breakfast week”, the gloomy and rainy weather today is certainly not helping me get out of bed right away but my determination remains strong. Here’s my recipe for today’s breakfast.

Longanissa Hash with Tomato Scrambled Eggs and Garlic Fried Rice

What you’ll need

For the Longganisa Hash

3 pieces of Pampanga’s Best Skinless Longganisa

1 medium red onion, chopped finely
2 medium potatoes, diced

2 tablespoons of canola oil

salt and pepper, to taste

For the scrambled egg

2 eggs, beaten

1 teaspoon of sesame oil
1/8 teaspoon of pepper

2 pieces of medium sized red tomatoes, chopped

For the garlic fried rice

2 tablespoons of canola oil
3 tablespoons of garlic, crushed
1 1/2 cup of cooked white rice

How to do it

For the Longganisa Hash

– In a medium sized non-stick pan, heat up the oil over medium heat and
saute the mashed longanissa. Cook for three (3) minutes.

– Saute the onions until translucent.

– Add the potatoes, and cook until tender.

– Season with salt and pepper.

For the scrambled egg

– Crack the eggs in a bowl, add sesame oil and pepper then beat it.

– Using the same pan, saute the tomatoes until is has softened.

– Add in the eggs, scramble it until its set.

For the garlic fried rice

– Using also the same pan, heat the oil over low heat then saute the
garlic, until it has browned.

– Add the rice, season with a little bit of salt then mix well.

Serves two (2) to three (3) people | Best served with a warm cup of coffee. πŸ™‚

Ham and Cheese Roll-ups

Day 2 of the “Breakfast Week”, it was definitely a struggle to get up earlier but I’m really motivated to get up and make it a habit to prepare and eat a decent breakfast everyday.

Ham and Cheese Roll-ups

What you’ll need

1 small flour tortillas
2 slices of ham

1/3 cup of cream cheese, softened
1 tablespoon of spring onions, sliced
salt and pepper, to taste
1 teaspoon of olive oil

How to do it

– On a small non-stick sauce pan over low heat, saute the spring onions
for one (1) minute. Remove from heat. Transfer into a bowl, and set
aside.

– In a bowl, mix cream cheese, spring onions, salt and pepper. Make sure
to mix it very well.

– In the small non-stick sauce pan over low heat, warm the flour tortilla
until lightly browned.

– Once you’re done warming up the flour tortilla, spread the cream cheese mixture.
Top with ham and spread again with cream cheese mixture then roll up tightly into
a log and slice.

Serves one (1) person | Best served with a warm cup of coffee. πŸ™‚

Notes on this recipe

* To soften the cream cheese, place it in the microwave for 15 seconds.
* To warm the flour tortilla, you can also use a skillet.
* A toothpick will help you hold the flour tortilla once you roll it.
* As an alternative to flour tortillas you can also use white loaf bread.
Just trim the edges, flatten it with a rolling pin, spread the cream cheese
mixture and top it with the ham, roll it up and tightly wrap it in a cling wrap.
Place it in the ref for a few minutes before slicing.

Cinnamon-Caramel Toast

I’m not a huge fan of breakfast. I don’t think that its the most important meal of the day, to me lunch (or brunch) is the most important meal of the day. To me sometimes breakfast is such a burden, I just wait for 11am so I could have brunch. I don’t know, I just don’t have the appetite for breakfast. Sometimes all I need is a good cup of coffee and a simple sandwich, that’s it. So I made it my mission to find simple and not timing consuming breakfast recipes, easy to do but still yummy for the tummy.

Cinnamon-Caramel Toast

What you’ll need

2 slices of bread
3 tablespoons of butter
2 tablespoons of brown sugar
dash of cinnamon
butter for frying

How to do it

– In a bowl, put in the sugar, cinnamon and butter.
– Dip it evenly on each side of the bread slice.
– In a small non-stick pan, melt some butter.
– Fry both sides of the bread until golden brown.

Serves One (1) to two (2) people | Best enjoyed with a good cup of hot coffee . πŸ™‚

Notes on this recipe

1. What we use here at home is muscovado sugar. It doesn’t have the same texture as brown or white sugar and it tends to build up once you mix it with the butter, so I don’t recommend you to use it.
2. If you don’t have any brown or muscovado sugar at home, you as always use white sugar.
3. Always make sure to keep the stove setting on low so you won’t have a burnt toast.
