Dessert Madness: Chocolate Mousse

Chocolate Mousse is my ultimate favorite dessert of all time, even its cake version is an absolute love. Now that I’ve found out that it is very easy to make one and it doesn’t consume a lot of your time so I decided to give it a try. The result: pure chocolatey yumminess! I just love it even more. 🙂

Chocolate Mousse

Recipe

3/4 cup heavy cream
8 ounces of semisweet chocolate chips
1/4 cup of whipped cream

Procedure

1. In a small saucepan, pour the heavy cream to a boil.
2. Once it boils, remove from heat and pour the chocolate. Stir until the chocolate has melted and completely smooth.
3. Pour into individual demitasse cups or small cups and let it cool. Refrigerate and serve with a dollop of whipped cream.

Notes on this recipe

1. As a substitute to heavy cream you can also use all-purpose cream.
2. I still had a lot of leftover whipped cream from my mango mousse, so I used it.

Sayote (Chayote) and Carrots Stew (Guisadong Sayote & Carrots)

This is what I have when I feel that I haven’t eaten anything healthy for a long time. When you’re in a hurry, or have so little time to cook anything for lunch or dinner this is the recipe you should pull out of your hat.

Sayote (Chayote) and Carrots Stew

Recipe

3 tablespoons of cooking oil
2 tablespoons garlic, peeled and crushed
1 piece red onion, peeled and sliced in half then slice vertically
2 pieces red tomatoes, sliced
2 pieces sayote (chayote), peeled and rectangularly sliced
2 pieces carrots, peeled and roundly sliced
1/4 kilo ground beef
2 pieces of beef bouillon cubes
5 cups of water
black pepper to taste

Procedure

1. In a stock pot place the cooking oil and set the stove on low. Once that is heated, place the garlic and wait for it to be golden brown then add in the onions, cook until translucent. Add the tomatoes, stir then wait until the tomatoes are soft.
2. Add the ground beef, 1 beef bouillon cube and black pepper, stir then wait for not more than 10 minutes.
3. Once the ground beef is cooked add water then both carrots and sayote (chayote) and the 2nd beef bouillon cube, stir and wait for 20 minutes until the carrots and sayote (chayote) are cooked. Taste the soup, adjust taste if need then you are good to go.

Serves 4-5 persons | Best served with hot rice and fried fish. :)

Notes on buying…

Carrots and Sayote (Chayote)
– Make sure that they are still crisp and firm when you hold them. Once you feel a little softness is an indication that it has already past its prime.

Tomatoes
– Buy a good mix of ripe (red) and slightly under-ripe (a mix of green and red) ones. Selecting a bunch of ripe tomatoes especially if you don’t intend to use it the same day prevents you from having a good quality tomato when you need it. Only select all ripe ones if you intend to use them all the same day since storing a bunch of all ripe tomatoes and not using them right away tend to go bad quickly.

Onions
– Make sure that they haven’t sprouted, meaning a green and white stalk on the top and white roots at the bottom are not present at all.

Ground beef
– It has to have a cherry red or dark red color. Having a brown or greyish color indicates that it is no longer fresh.
– Buy only what you need to ensure its quality and to avoid having stale meat.
